Mexican omelette
Beans and eggs are a great way to start your day! We all know them from English breakfasts, but here’s another way to combine the two: a Mexican omelette. You’ll need oil, onion, garlic, cumin, chili powder, peppers, tomatoes, beans, oregano fresh coriander, eggs and grated cheese. The full recipe can be found here.
We made this recipe last weekend and replaced the grated cheese with feta! Certainly a recommendation.
