Late night snack: Zucchini and feta balls
Next time you’re craving for a late-night snack, don’t reach for the crisps. They’re super unhealthy and they’re not even really that good, right? Instead go for something light and delicious like these Greek kolokythokeftedes: Little balls made of zucchini and feta. You’ll need two cups of grated zucchini, 1/4 cup of feta, a bit of ouzo, a clove of garlic, two spring onions, some fresh herbs, one egg, salt and pepper, flour, breadcrumbs and oil.
Mix the zucchini, feta, ouzo, garlic, spring onions, herbs and egg, season with salt and pepper. Roll the mixture into balls and roll them through the flour and breadcrumbs. (Deep)fry until golden brown and serve with tzatziki!
